No. 3463 — Zapekanka: Oven-Baked Spiced Vodka
English historical translation of Molokhovets recipe No. 3463 from the 1901 Russian cookbook, retaining original methods and measures.
The source begins with 4 shtofs of vodka twice distilled over dried lemon peel, in a thick glass bottle.
It specifies 12 zolotniks cinnamon, 4 zolotniks star anise, 5 zolotniks cardamom, 5 zolotniks mace and 2 nutmegs, crushed or grated.
The bottle was coated with rye dough three finger-widths thick and, historically, placed overnight in a bread oven with residual heat on four successive nights, removing it every morning.
At the end the drink was decanted and sweetened with 1 pound sugar per shtof.
Historical editorial note: Heating alcohol in a closed glass bottle in an oven is extremely dangerous owing to flammable vapour and pressure. This is historical documentation, not a usable recipe.
