No. 3447 — Very Tasty Apple Drink

English historical translation of Molokhovets recipe No. 3447 from the 1901 Russian cookbook, retaining original methods and measures.

Choose the tartest apples freshly picked from the tree, remove their cores and cut into very small pieces.

Fill bottles up to their shoulders with the apples and fill completely with the freshest honey. Cork, seal with resin and store in a cellar for one year.

The author says a colder cellar is better, but warns that freezing spoils the drink. After a year it is considered delicious.

Historical editorial note: A year-long fruit-and-honey fermentation in sealed bottles may cause unsafe pressure or spoilage. The method is historical, not safe contemporary storage advice.
