No. 3432 — Quick Berry Water
English historical translation of Molokhovets recipe No. 3432 from the 1901 Russian cookbook, retaining original methods and measures.
Fill half a bottle with wild strawberries or raspberries and top up with cooled boiled water. Put on ice for three days.
Then serve with one heaped teaspoon sugar per glass. The author says strawberry water becomes somewhat bitter if left too long, but raspberry water keeps its taste longer.
Choose the ripest berries. After three days gently shake the bottle to mix the expressed juice without crushing the berries. Let settle for several hours, strain, bottle and serve.
Historical editorial note: Three days of standing fruit in water is a historical practice, not a modern validated microbiological safety method.
