No. 3413 — Quick Nalivka, Another Method

English historical translation of Molokhovets recipe No. 3413 from the 1901 Russian cookbook, retaining original methods and measures.

Fill small three-bottle glass containers with berries, keeping each variety separate: Spanish strawberries, ordinary strawberries, cloudberries, red raspberries or white raspberries.

Protect the vessels with straw and stand in a cauldron of cold water. The source insists that bottles be sturdy, made of thick glass and tightly stoppered.

Bring the outer water to a boil and continue for 1½ hours. Remove the cauldron from heat and let its water cool before taking out the bottles.

Drain the juice from each variety separately, then add ¼–¾ pound sugar per bottle juice and 1–2 glasses French vodka per bottle, adjusting to taste.

The author says this aromatic nalivka can be ready in one day.

Historical editorial note: Boiling tightly stoppered bottles containing fruit can cause dangerous pressure buildup and breakage; this archival process is not a safe modern procedure.
