No. 3407 — Clear Carrot Preserve
English historical translation of Molokhovets recipe No. 3407 from the 1901 Russian cookbook, retaining original methods and measures.
Boil yellow or red carrots until beginning to soften. Remove and cut attractively into little stars.
Cook in thick syrup until translucent. The author notes that carrots are available all year, so making large stores only wastes sugar.
For prompt use, ½ pound sugar per pound carrots is sufficient. Old carrots from spring are unsuitable.
Historical editorial note: The original describes a sweet to be eaten promptly, not a safe shelf-stable canning formula.
Original source: Read Russian recipe No. 3407. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
