No. 3405 — Green Walnut Preserve

English historical translation of Molokhovets recipe No. 3405 from the 1901 Russian cookbook, retaining original methods and measures.

Choose green walnuts, prick them all around with a wooden pin and soak in soft water for nine days.

Cook in fresh soft water until tender enough for a wooden pin to pass easily through, then drain in a sieve.

For each pound walnuts weigh 2 pounds sugar. Make a moderately thin syrup from half the sugar, add a piece of cinnamon and several cloves, and pour it cold over the walnuts for three days.

Drain the walnuts, add the remaining sugar to the syrup, bring to the boil once, cool and cover the nuts for another three days.

Drain again, reduce the syrup to the proper thickness and pour it hot over the nuts. Leave for nine days, transfer to a jar and tie with animal bladder.

Historical editorial note: Multi-day soaking and unrefrigerated holding are historical; the method is not validated as a safe modern preserve.
