No. 3401 — Preserved Lingonberries
English historical translation of Molokhovets recipe No. 3401 from the 1901 Russian cookbook, retaining original methods and measures.
Put sorted lingonberries into a compotier jar a little at a time, sprinkling with sifted sugar, using 1 pound sugar for every 3 glasses fruit.
Tie the jar with animal bladder and stand it in cold water. Put the saucepan immediately over high heat, and boil for twenty minutes after the water begins to boil.
Remove the pan from heat and let cool before taking the jar out, proceeding as in the general note.
Historical editorial note: The historic compotier method is not a validated modern preservation procedure.
