No. 3398 — Preserved Cherries in Compote Jars

English historical translation of Molokhovets recipe No. 3398 from the 1901 Russian cookbook, retaining original methods and measures.

Any kind of cherry may be preserved, with or without stones, though the author prefers stoning them.

For 1 pound cherries take 1 pound sugar and ¾ glass water. Cook a thick syrup, add cherries to the boiling syrup and keep over heat for three to five minutes.

When cool, transfer to a compotier jar and tie with animal bladder, continuing as in the general note. The source repeats that raw plums may likewise be covered in thick syrup.

Historical editorial note: Historic jar closures and processing do not establish modern safe storage.
