No. 3397 — Preserved Strawberries in Compote Jars

English historical translation of Molokhovets recipe No. 3397 from the 1901 Russian cookbook, retaining original methods and measures.

For each pound ripe strawberries use 1 pound sugar. Boil a very thick syrup with ¾ glass water, skimming thoroughly.

Add strawberries and hold over low heat for five minutes. Once cooled, transfer to a compotier jar, tie with animal bladder and continue as in the general note.

The source also remarks that raw plums may be covered with thick syrup.

Historical editorial note: Bladder-covered jar storage is a historical process, not validated contemporary canning.
Original source: Read Russian recipe No. 3397. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
