No. 3390 — Preserved Greengages and Other Plums, Second Method

English historical translation of Molokhovets recipe No. 3390 from the 1901 Russian cookbook, retaining original methods and measures.

Pierce fully ripe fruit with a wooden pin, pack into a jar and sprinkle with fine sugar, using 1 pound sugar per pound greengages.

Pour rum over the fruit and tie the jar with animal bladder. Bring it to a boil on the stove and immediately transfer to the oven for four hours without adding more firewood.

Historical editorial note: Heating a closed jar containing rum can create fire and pressure hazards. This is a historical description only and must not be followed as written.
Original source: Read Russian recipe No. 3390. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
