No. 3380 — Preserved Pears, Another Method

English historical translation of Molokhovets recipe No. 3380 from the 1901 Russian cookbook, retaining original methods and measures.

Peel the pears evenly and lower into hot water mixed with limewater, using 2 tablespoons limewater for every 3 glasses water.

Cook covered in this hot limewater, taking care the pears do not fall apart. When tender, lift with a slotted spoon into a sieve and immediately rinse with cold water.

Prepare a thick syrup and continue as described in the general note in recipe No. 3376.

Historical editorial note: The historic use of limewater of unspecified concentration is not a modern food-safety instruction; the linked compotier method is likewise unvalidated.
Original source: Read Russian recipe No. 3380. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
