No. 3375 — Third Method for Keeping Berries and Fruit through Winter

English historical translation of Molokhovets recipe No. 3375 from the 1901 Russian cookbook, retaining original methods and measures.

For each pound berries use 1 pound sugar and ½ glass rum. Put prepared berries or fruit into a jar in layers with sugar and the finest rum, mixing gently.

Remove twigs from berries. Peel apples or pears and cut each fruit into quarters. Several kinds of fruit or berries may be layered in one jar.

Tie the jar with animal bladder.
