No. 3374 — Second Method for Keeping Berries and Fruit through Winter

English historical translation of Molokhovets recipe No. 3374 from the 1901 Russian cookbook, retaining original methods and measures.

Sprinkle a layer of sugar into a jar and add a layer of berries or fruit. Continue alternating until full, using 1 pound sugar for each pound fruit.

Tie the jar with animal bladder, seal with resin and keep on ice.

The author claims this method preserves aroma and freshness. When served as a winter dessert, some cooks add brandy or rum.

Historical editorial note: High sugar content and historic covers do not alone validate safe long-term storage.
