No. 3364 — Wild Strawberry Syrup, Another Method

English historical translation of Molokhovets recipe No. 3364 from the 1901 Russian cookbook, retaining original methods and measures.

For 1 pound fully ripe, sorted wild strawberries take 1½ pounds lump sugar. Put the berries in an earthenware bowl.

Moisten the sugar with a little water, about ½ glass, and boil a thick syrup. Pour it boiling over the fruit and leave in a cold place for 24 hours.

Strain through linen into small dry bottles, cork, seal with resin and keep in a cellar.

Historical editorial note: The historic cool holding and bottling method does not ensure safe long-term storage.
