No. 3361 — Raspberry, Wild Strawberry or Redcurrant Syrup or Fruit Drink

English historical translation of Molokhovets recipe No. 3361 from the 1901 Russian cookbook, retaining original methods and measures.

Rub fresh berries through a sieve. For each pound strained juice or thin purée take 1–2 pounds very finely pounded and sifted sugar.

Pour into a bowl and stir often until the sugar dissolves. Leave for 24 hours, then transfer into small fruit jars.

Cover with animal bladder and keep on ice, but not for long. The author also serves this as a dessert, stirring thoroughly each time.

Historical editorial note: This period preparation is uncooked; its covering and storage instructions do not establish modern food safety.
