No. 3359 — Mixed-Fruit Macédoine Juice without Sugar
English historical translation of Molokhovets recipe No. 3359 from the 1901 Russian cookbook, retaining original methods and measures.
Put 6 glasses redcurrants, 2 glasses fully ripe cherries, 5 glasses blackcurrants and 3 glasses raspberries in a preserve pan. Add water until the berries are only slightly submerged.
Cook until the fruit breaks down but has not turned brown, then drain in a sieve.
Measure the juice, return to the pan and reduce until half remains. Transfer to a soup bowl, cover and bottle the next day.
Cork, seal with resin, keep on ice until frosty weather and then in a dry cellar.
Historical editorial note: The historic bottle-storage advice is not sufficient to ensure safe preservation of sugar-free mixed juice.
