No. 3355 — Lemon Juice with Sugar

English historical translation of Molokhovets recipe No. 3355 from the 1901 Russian cookbook, retaining original methods and measures.

Rub the zest of several lemons into sugar, then remove the outer skin and squeeze all the juice.

Remove seeds, strain through flannel and fill jars or bottles, adding 2 glasses sugar for each glass lemon juice.

Keep in the sun for two or three days, corked and frequently shaken so that the sugar dissolves completely.

Then cork the bottles tightly and seal with resin; if using jars, tie them over with animal bladder immediately.

Historical editorial note: Sun steeping and animal-bladder jar covers are historical, not safe modern food-preservation instructions.
