No. 3323 — Wild Strawberry Syrup for Prompt Use

English historical translation of Molokhovets recipe No. 3323 from the 1901 Russian cookbook, retaining original methods and measures.

Put cleaned wild strawberries into an earthenware dish and pour over just enough cold water to cover. Leave for 24 hours.

Mash gently by hand without crushing the seeds, press through a napkin, bring the juice to the boil, skim and strain.

For each 3 glasses juice use 1 pound sugar, which the printed source equates to 3 glasses of lump sugar. Bring to a boil three or four times and proceed as usual.

Historical editorial note: Unrefrigerated steeping for 24 hours is historical and not a safe modern handling recommendation.
Original source: Read Russian recipe No. 3323. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
