No. 3292 — Lingonberry and Apple Preserve

English historical translation of Molokhovets recipe No. 3292 from the 1901 Russian cookbook, retaining original methods and measures.

The author remarks that although this preserve is not particularly attractive, it is tasty and especially liked by convalescents.

For 1 pound sorted lingonberries take 4 sweet apples, peeled, cored and sliced. Dissolve 1½ pounds sugar in 1½ glasses water.

Cook the lingonberries in the syrup until half done, then add the sweet apples. Lemon peel previously boiled in water, or fresh lemon zest, may be included.
