No. 3280 — Small Korobovka Apples
English historical translation of Molokhovets recipe No. 3280 from the 1901 Russian cookbook, retaining original methods and measures.
These small apples were sold in St Petersburg in September. Peel them, leaving the stems intact, without cutting the apples, and immediately drop into cold water.
Lower into boiling water and, after one boil, lift out with a slotted spoon and transfer immediately to plenty of cold water. Let stand briefly, then weigh.
For each pound apples take 1 pound sugar and 1 glass water. Make a syrup with lemon zest or vanilla. When boiling, add the apples and simmer until translucent.
