No. 3259 — Wild Strawberry Preserve
English historical translation of Molokhovets recipe No. 3259 from the 1901 Russian cookbook, retaining original methods and measures.
Arrange 1 pound large fresh wild strawberries gathered in fine weather on a dish and sprinkle with spirit.
Sprinkle with ½ pound sugar and leave in the cellar overnight. The next day boil a syrup from 1½ pounds sugar and 1 glass water, add the berries and proceed as usual.
Alternatively use the fourth method in the general note.
Historical editorial note: Spirit treatment and cellar storage are recorded as historical methods, not contemporary food-preservation recommendations.
