No. 3252 — Kyiv-Style Raspberry Preserve without Water

English historical translation of Molokhovets recipe No. 3252 from the 1901 Russian cookbook, retaining original methods and measures.

Use the fourth method in the general note, or the following alternative. Place 1 pound raspberries in a clean glazed preserve pan, layering with 1½ pounds powdered sugar.

Leave on ice overnight. As the sugar begins to dissolve, the fruit releases its juice. Place the same pan over hot coals without adding water, or over spirit burning in a shallow dish.

The author states that the preserve should be ready in about 18–20 minutes if the pan bottom is not too thick. Do not make more than two layers of berries.

Historical editorial note: Heating a pan over freely burning spirits is a fire hazard; the historical technique is not a modern recommendation.
