No. 3250 — Green Gooseberries Shaped Like Hop Cones
English historical translation of Molokhovets recipe No. 3250 from the 1901 Russian cookbook, retaining original methods and measures.
Gather large green gooseberries and remove the stems. Cut each berry into four sections from the stem end without cutting all the way through, to form four petals.
Remove the seeds carefully with a penknife. Thread four or five prepared berries onto a currant stem so they resemble hop cones.
Cook very carefully as in recipe No. 3246, including the historic process with cherry leaves and spirit in a pot.
Historical editorial note: The linked historic method involves heating spirits in an oven; it is not a safe contemporary preparation.
Original source: Read Russian recipe No. 3250. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
