No. 3247 — Green Gooseberries and Green Currants

English historical translation of Molokhovets recipe No. 3247 from the 1901 Russian cookbook, retaining original methods and measures.

Put seeded green gooseberries into cold water. Boil cherry leaves in a saucepan of water; when the water becomes green, remove the leaves and put the berries into the boiling liquid for one minute.

Drain in a sieve, rinse in cold water and transfer to iced water for several hours to firm the fruit. Drain.

For 1 pound berries make a syrup from 2 pounds sugar and 1 glass water. Bring to the boil and add the berries, then follow the usual method or the second or third method.

Green currants may be preserved in exactly the same way.
