No. 3245 — Green Gooseberry Preserve
English historical translation of Molokhovets recipe No. 3245 from the 1901 Russian cookbook, retaining original methods and measures.
Take large green, unripe gooseberries, remove the seeds, rinse, let dry and weigh. Cover with spirit or strong vodka, cover the container and drain the berries in a sieve after an hour.
Meanwhile fill a small saucepan with cherry leaves and water and leave until cool. For 1 pound prepared gooseberries take 1 glass water and 2 pounds sugar.
Boil the syrup and add the berries. Bring to the boil three times, taking the pan off the heat for 2–3 minutes each time, then finish at the gentlest heat. See the general note. The second or third preserve method may also be used.
Historical editorial note: Alcohol soaking and historical preservation methods are documentary. They do not establish present-day shelf life or food safety.
