No. 3232 — Molasses Gingerbread

English historical translation of Molokhovets recipe No. 3232 from the 1901 Russian cookbook, retaining original methods and measures.

Pour 1 teacup boiling water over 1 teaspoon potash and mix well. Bring 3 pounds good molasses and 1 pound sugar to the boil with 1 zolotnik cardamom, ½ lot cinnamon, 1 zolotnik cloves, or mace or lemon zest, and ¼ pound unsalted butter.

Immediately remove from the heat. Gradually add 3 pounds fine wheat flour and beat with a spatula for as long as possible.

When the mixture cools to the warmth of fresh milk, add the cooled dissolved potash and beat for another half hour. Cover with a napkin and leave for 12 hours.

Shape into figures or squares and bake in the oven after bread.

Historical editorial note: The potash solution and long holding period are historical and require safe modern formulation and storage controls.
