No. 3225 — Rosewater Gingerbread

English historical translation of Molokhovets recipe No. 3225 from the 1901 Russian cookbook, retaining original methods and measures.

Bring 1 glass rosewater and 1 pound sugar to the boil and cool slightly. Dissolve 1 dessertspoon potash in water and combine with the rosewater syrup.

Add 1 pound flour and beat thoroughly with a wooden spatula. Cover tightly and leave on top of the stove.

Next morning roll out, allow to rise and bake in an oven that is not too hot.

Historical editorial note: The original specifies potash and overnight warmth without controlled food-safe conditions; this is a documentary recipe.
