No. 3202 — Natronkuchen (Soda Cake)

English historical translation of Molokhovets recipe No. 3202 from the 1901 Russian cookbook, retaining original methods and measures.

Mix 1 cup melted butter with 2 cups sugar and zest from 1 lemon. Beat in 4 yolks one at a time, then stir in 4 cups flour, thinning with 1 cup lukewarm milk.

Add 1 heaped teaspoon baking soda and 3 heaped teaspoons cream of tartar, and mix thoroughly. Fold in 4 beaten whites.

Transfer to an adjustable cake tin greased and sprinkled with breadcrumbs. Bake in the oven for ½–¾ hour; test with a thin wooden splinter.

The printed ingredient summary specifies 1 cup 'melted milk', 2 cups sugar, zest of 1 lemon, 4 yolks, 4 beaten whites, 4 cups flour, 1 cup milk, 1 teaspoon baking soda, 3 teaspoons cream of tartar, ½ tablespoon butter and ¼ glass breadcrumbs. For six people use half the quantities.

To provide

1 cup 'melted milk' (as printed).

2 cups sugar.

Zest of 1 lemon.

4 yolks.

4 beaten whites.

4 cups flour.

1 cup milk.

1 teaspoon baking soda.

3 teaspoons cream of tartar.

Historical editorial note: The method clearly calls for melted butter, but the final list says 'melted milk'; the discrepancy is retained.
