English historical translation of Molokhovets recipe No. 3196 from the 1901 Russian cookbook, retaining original methods and measures.
Beat 6 yolks until pale with 1 glass sugar. Separately beat 1 glass butter until pale, then combine. Gradually stir in 4 glasses flour while adding 1 glass milk.
Add ½ glass raisins and about ½ glass pounded almonds. Flavour with either half a crushed vanilla pod, 6 cardamom seeds or 5 drops lemon oil. Stir smooth.
Fold in 6 beaten whites, sprinkling in either 7 level teaspoons Frankfurt baking powder, or 2 level teaspoons baking soda and 6 level teaspoons cream of tartar.
Transfer to a tall mould greased with butter and heavily sprinkled with breadcrumbs. Bake in a hot oven for at least ¾ hour.
Historical editorial note: The two leavening options are translated as printed historical quantities; modern substitutes should not be assumed equivalent without formulation review.
