No. 3194 — Quick Small Vanilla Pastries
English historical translation of Molokhovets recipe No. 3194 from the 1901 Russian cookbook, retaining original methods and measures.
Knead ½ glass soft butter, ¼ glass sour cream, ¾ glass sugar, 2 vershoks pounded vanilla or lemon zest, ½ teaspoon salt and nearly 1 pound flour. Roll fairly thinly.
Cut rounds using a small tin cutter or the smallest drinking glass, transfer to an ungreased iron sheet and sprinkle with ¼ glass coarsely crushed sugar and ⅛ glass chopped sweet almonds.
Bake about 5 minutes, until barely browned.
Historical editorial note: The source measures vanilla as '2 vershoks', a length measure; it is retained without conjectural conversion.
Original source: Read Russian recipe No. 3194. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
