No. 3193 — Flaky Caraway Crackers (Lomantsy)
English historical translation of Molokhovets recipe No. 3193 from the 1901 Russian cookbook, retaining original methods and measures.
Beat ½ pound butter until pale; gradually add ½ glass Bavarian beer, ¾ pound (2¼ glasses) flour, 2 heaped teaspoons caraway seeds and 1½ teaspoons salt.
Knead until the dough releases from the hands. Dust with more flour and roll as thinly as for noodles. Cut into oblique squares and prick frequently with a fork.
Transfer to an iron sheet without greasing or dusting and bake for about 10 minutes. These crackers bake very rapidly and are ready as soon as they brown.
Total flour is almost 1 pound. The source recommends trying half the quantities at first.
