No. 3188 — Cinnamon Rings

English historical translation of Molokhovets recipe No. 3188 from the 1901 Russian cookbook, retaining original methods and measures.

Take 5 hard-boiled yolks, ⅛ pound fresh butter, ¼ glass sugar, 1 raw egg, ¾ glass flour and finely ground cinnamon. Work with a wooden spoon and then by hand for at least a quarter of an hour.

Shape rings, roll in cinnamon sugar and place on a flour-dusted baking sheet. Bake at the very gentlest heat. The batch makes 24 rings.

Alternatively make small flat round cakes, brush with egg and sprinkle with finely pounded almonds. The ingredient list gives ⅛ pound butter, 5 eggs, ⅓ glass sugar in total, ¾ glass flour and 1 heaped teaspoon cinnamon.

To provide

⅛ pound butter and 5 eggs.

⅓ glass sugar in total.

¾ glass flour.

1 heaped teaspoon cinnamon.

Historical editorial note: The closing list states 5 eggs, while the method calls for 5 boiled yolks plus 1 raw egg; the discrepancy is retained.
