No. 3158 — Biscuits for Tea or Coffee

English historical translation of Molokhovets recipe No. 3158 from the 1901 Russian cookbook, retaining original methods and measures.

Mix ¾ pound flour thoroughly with ½ pound unsalted butter, then add ⅛ pound (¼ glass) sugar and 1 egg. Knead well on a table, wrap in a napkin and leave in a cold place until firm.

Dust the table with flour and shape very narrow, long rolls. Alternatively roll the dough to the thickness of two silver rouble coins stacked together and cut round cakes with a cutter or glass.

Put on an iron baking sheet, brush with yolk, sprinkle with coarsely crushed sugar and finely chopped almonds, then bake in a moderately heated oven for half an hour. Serve hot.
