No. 3137 — Horseshoe-Shaped Tea Rolls
English historical translation of Molokhovets recipe No. 3137 from the 1901 Russian cookbook, retaining original methods and measures.
Mix 1¼ glasses warm milk, 3 heaped tablespoons thick yeast mixture, ¼ garnetz flour and 10 yolks. Beat thoroughly and let rise slightly in warmth.
Beat the dough again, add ½ pound melted butter, salt and about 1½ additional glasses flour if needed. Knead well and let rise a second time.
Roll into strips about 4 vershoks long, thicker in the middle and tapered at each end. Form into crescents or horseshoes on a baking sheet and press the tops flat.
Allow to rise, brush only the tops, not the sides, with yolk, sprinkle with sugar and bake in a moderately heated oven for half an hour.
