No. 3093 — Tvorog Strudel for Six
English historical translation of Molokhovets recipe No. 3093 from the 1901 Russian cookbook, retaining original methods and measures.
Prepare half the dough quantity in recipe No. 3090. Mix 1 pound dry tvorog (farmer’s cheese) with 4 yolks, ½ glass sugar, ½ tablespoon butter, ½ teaspoon cinnamon, 1 tablespoon sour cream and ¼–½ glass scalded raisins.
Spread this filling on the rolled-out dough, lightly greased with butter, and roll into a log; continue as for the preceding strudel.
