No. 3080 — Buns, Another Method
English historical translation of Molokhovets recipe No. 3080 from the 1901 Russian cookbook, retaining original methods and measures.
Make a sponge from 3¾ glasses flour, 1½ glasses milk and ⅜ glass yeast mixture. Once it has risen a little, add 2¼ glasses yolks, 1½ glasses melted butter, ½ glass sugar, 1½ zolotniks cinnamon and the remaining flour.
Beat the dough as directed in the source, then fill one-third of buttered paper moulds. When the dough rises above half their height, bake. Total flour: ½ garnetz plus 1½ glasses.
Historical editorial note: The original phrase about beating the dough '2½ times' is ambiguous and has not been turned into an invented proofing duration.
Original source: Read Russian recipe No. 3080. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
