No. 3074 — Excellent Sweet Buns

English historical translation of Molokhovets recipe No. 3074 from the 1901 Russian cookbook, retaining original methods and measures.

Boil ¼ garnetz (3 glasses) milk and let cool. Beat in 10 eggs, add ½ garnetz flour and ¾ glass strained yeast mixture, stir smooth and leave in warmth.

Once the dough rises, beat thoroughly and add ¾ glass butter, 1 glass sugar, salt and another ½ garnetz flour, enough to make a dough that can be cut with a knife without sticking. Knead until it comes away from the hands.

After the second rise, shape buns and place on a warm flour-dusted baking sheet. Let rise, brush with egg and bake in a hot oven. Total flour: 1 garnetz (about 5 pounds).
