No. 3072 — Ordinary Buns without Eggs in the Dough
English historical translation of Molokhovets recipe No. 3072 from the 1901 Russian cookbook, retaining original methods and measures.
Mix warm milk, strained yeast mixture, ½ garnetz flour and salt until smooth. Add melted butter, sugar and enough of the remaining flour that the dough can be cut with a knife without clinging to it.
Knead until the dough comes away from the hands, set in warmth to rise, beat again and allow a second rise. Shape buns and leave to rise a third time on the baking sheet. Brush with egg and bake.
The full list specifies ¼ garnetz (3 glasses) milk, 1 garnetz (5 pounds) flour, ¾ glass yeast mixture, ½ pound butter and 1 glass sugar. Two eggs are used only for glazing, despite the title 'without eggs'.
