No. 3071 — Everyday Sweet Buns
English historical translation of Molokhovets recipe No. 3071 from the 1901 Russian cookbook, retaining original methods and measures.
Pour warm milk into a kneading trough, strain in the yeast mixture and stir in half the flour to make a sponge. Once risen, add salt, yolks beaten pale with sugar, the other ingredients and 5 whipped whites.
Knead to a dough stiff enough to be cut with a knife without sticking to the blade. Leave to rise, shape into buns and place on an iron sheet. When risen, brush with egg and bake for 1 hour.
The ingredient list calls for 1 garnetz flour, ¾ glass yeast mixture, ¼ garnetz (3 glasses) milk, 5 eggs, ¾ glass melted butter, ⅔ glass sugar and bitter almonds, cardamom, cinnamon or aromatic oil. Alternatively the buns may be shaped immediately after mixing, placed on the sheet, risen and baked.
