No. 3068 — Scalded-Dough Buns without Eggs or Butter

Scald 1 glass flour with about 2 glasses milk and stir smooth. Once cool, add ½ glass yeast mixture, mix, sprinkle the dough with flour and allow to rise.

Pour in 1 glass warm milk, add salt and about 10 glasses flour. Knead until the dough no longer sticks to the hands and let rise. Shape into buns and let them rise on an iron baking sheet, then bake.
