No. 3062 — Large Saffron Bun or Kulich

English historical translation of Molokhovets recipe No. 3062 from the 1901 Russian cookbook, retaining original methods and measures.

Take ½ glass yeast mixture, ¼ glass water, ½ pound (1 glass) sugar, ⅓ pound (1 glass) raisins, ½ zolotnik saffron steeped in ¼ glass cold water or rum, 60 yolks, 2½ glasses melted butter and 1 garnetz flour minus 2 glasses.

Beat the yolks with water, add the yeast and about 5 glasses flour; allow to rise. Beat the dough well, add salt and the remaining ingredients and knead thoroughly into a firm dough. Leave to rise a second time.

Shape into buns or a kulich and set on a baking sheet. When risen, brush with egg and bake in a hot oven. The kulich may be sprinkled with finely chopped almonds, dried currants, coarsely crushed sugar, breadcrumbs and finely pounded and sifted cinnamon.
