No. 3061 — Scalded-Dough Buns or Kulich

English historical translation of Molokhovets recipe No. 3061 from the 1901 Russian cookbook, retaining original methods and measures.

Scald 1½ glasses flour with 1½ glasses milk and stir until smooth. When cool, add ¾ glass yeast mixture and let rise.

Beat 15 yolks with ½ glass sugar until pale; whip the 15 whites to a foam. Stir both into the dough and let rise a second time. Add ¾ glass warm melted butter and the remaining flour, beating as well as possible while keeping the dough from becoming too stiff.

Divide between greased paper moulds; after the dough rises in them, carefully bake in a hot oven. Total flour: 1 garnetz (about 5 pounds). Use 12–15 zolotniks dry yeast or ¾ glass thick yeast mixture. The source refers to No. 3651 and the general note.

Original source: Read Russian recipe No. 3061. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
