No. 3045 — Baba with Fine Smolensk Groats
English historical translation of Molokhovets recipe No. 3045 from the 1901 Russian cookbook, retaining original methods and measures.
For six people, mix ¾ glass of the finest Smolensk groats with 10 yolks and ¾ glass sugar, and beat until white.
Add ¼ glass finely pounded, peeled bitter almonds. When the mixture has expanded and become pale, fold in the foam of 12 beaten whites. Transfer to a buttered and flour-dusted mould and bake.
Historical editorial note: Smolensk groats were a finely processed historical grain product; the original name is preserved.
