Complete English translation of Molokhovets recipe No. 285 from the 1901 Russian cookbook, retaining original quantities, preparation and source.
Beat three egg yolks until pale with three lumps of finely crushed sugar. Add two or three finely crushed bitter almonds, pour in ⅓ glass of milk and mix.
Add ⅙ glass of lightly crushed semolina groats or finely ground rusks and let the mixture swell. Fold in three beaten egg whites.
Drop the mixture by teaspoonfuls into milk soup or bilberry soup, cooking until the dumplings rise to the surface.
Historical editorial note: Bitter almonds may contain cyanogenic compounds. This is a historical text, not a recommendation to consume untreated bitter almonds.
Original source: Read the Russian recipe No. 285. The quantities and historical terminology of the 1901 book are retained. See the measurements guide; period preparation and storage methods are not modern food-safety instructions.
