No. 2829 — Royal Cake (Supplement to Section XXI)

English historical translation of Molokhovets recipe No. 2829 from the 1901 Russian cookbook, retaining original methods and measures.

Beat 1 pound of the freshest unsalted butter until white. Add 10 yolks, 1 pound of granulated sugar, the zest of 1 lemon, ¼ pound of sweet almonds and ⅛ pound of bitter almonds. Work everything together for no less than an hour.

Fold in 10 beaten egg whites, gradually sprinkling in 1 pound of potato flour. Mix, transfer to an adjustable cake tin greased with butter and coated with breadcrumbs, and bake in a hot oven.

For six people make half the quantity: ½ pound butter, 5 eggs, ½ pound sugar, zest of ½ lemon, ⅛ pound sweet almonds, 1/16 pound bitter almonds and ½ pound potato flour. Use ¼ tablespoon butter to grease the tin.

Historical editorial note: Bitter almonds may contain cyanogenic compounds; the historical ingredient listing is documentary, not a modern food-safety recommendation.
