No. 2827 — Krupenik with Mixed Groats
English historical translation of Molokhovets recipe No. 2827 from the 1901 Russian cookbook, retaining original methods and measures.
Take equal quantities of rice groats, oat groats, buckwheat groats, rice and dried currants, altogether 1 pound. Wash the grains; scald and clean the currants. Mix everything together.
Moisten with eggs, season with salt, tie in a napkin greased with a tablespoon of butter and boil in rich meat broth. To serve, pour over the pudding some butter browned to a dark colour.
Historical editorial note: The source lists both 'Saracen millet' (an older name for rice) and rice; the duplication is retained rather than silently corrected.
Original source: Read Russian recipe No. 2827. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
