No. 2807 — Supplementary Note on Mutton
English historical translation of Molokhovets recipe No. 2807 from the 1901 Russian cookbook, retaining original methods and measures.
An addition to the introductory note on mutton on page 380: according to the historical source, lamb or mutton should not be used from animals younger than two months or older than three years, and the meat of a six-month-old lamb makes an excellent roast.
Historical editorial note: This numbered item is a historical editorial addendum rather than a separate recipe. Its meat-age advice reflects the source's period culinary judgment, not modern veterinary or food-safety standards.
Original source: Read Russian recipe No. 2807. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
