No. 2801 — Fasting Small Ring Breads (Sushki)
English historical translation of Molokhovets recipe No. 2801 from the 1901 Russian cookbook, retaining original methods and measures.
Take 4 pounds of flour. Prepare a sponge from half the flour, 2½ glasses of warm water and 8 zolotniks of yeast. Let rise, then add salt and sugar.
Pour in 1½ glasses of poppy-seed milk made from 1½ glasses of grey poppy seeds. Mix, add the remaining flour and about ½ glass of poppy seeds previously scalded with boiling water, then knead well.
Let rise again, form small rolls, allow to rise on a baking sheet and bake.
Historical editorial note: The heading calls these sushki, although the source directions shape and bake small rolls without a separate drying step.
