No. 2798 — Russian Ring-Shaped Pretzels (Krendeli)

English historical translation of Molokhovets recipe No. 2798 from the 1901 Russian cookbook, retaining original methods and measures.

Knead a fairly stiff dough from 1 garnets of flour, ¾ glass of yeast and about 4 glasses of salted water. Let rise slightly, beat well and leave to rise again.

Shape into ring pretzels and lower into boiling water. Lift out those that float using a stick or slotted spoon, place on a board and bake in the oven. Turn them when one side browns.

The original describes a wood-fired oven with the floor cleared on one side and the coals raked to the other.

Historical editorial note: The coal-fired oven procedure reflects period equipment and should not be treated as modern baking safety advice.
Original source: Read Russian recipe No. 2798. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
