No. 2797 — Fasting Plaited Buns with Saffron and Raisins

English historical translation of Molokhovets recipe No. 2797 from the 1901 Russian cookbook, retaining original methods and measures.

Make a sponge from 2¼ glasses of warm water, salt, 2–3 zolotniks of dried yeast and 2¼ glasses of flour. Let rise.

Add ½ glass of sugar rubbed until pale with 1½ tablespoons of olive oil, and ½ tablespoon of dried, finely crushed saffron previously infused in a small glass of water or vodka. Add flour and knead until the dough no longer sticks to the hands.

Mix in ½ pound (1½ glasses) of washed and thoroughly dried raisins and let rise a second time. Shape small rolls or plaits, sprinkle with sugar and bake. The total flour amount is about ½ garnets, or 2½ pounds.
